Beef and Rice Enchilada's Empty Beef and Rice Enchilada's

1 pound beef
1/2 package taco seasoning
1 box old el paso Spanish rice mix
2 10 oz cans enchilada sauce
1 can refried beans
10 8in flower tortillas warmed
4 cups shredded cheddar cheese

Prepare rice mix according to package directions. Meanwhile, in a large skillet cook beef with taco seasoning over medium heat until no longer pink; drain. Stir in Spanish rice and 1 can enchilada sauce and one refried beans.
Spoon about 2/3 cup beef mixture down the center of each tortilla. Top each with 1/3 cup cheese; roll up.
Place in an ungreased 13-in. x 9-in. baking dish. Top with the remaining enchilada sauce and cheese. Bake, uncovered, at 350° for 8-10 minutes or until the cheese is melted.

That sounds a whole lot esier than the way I make them..lol...
I gotta give these a try,I'm always up for quick fix meals Smile
